Today, The San Marcos Food Blog will be reviewing a local food cart that is serving delicious Southern Cuisine with a Cajun kick and Seafood options including Po’ Boy Sandwiches, Fried Calamari, and Oysters. They also offer their famous Funnel Cake Fries.
The owners of The Caboose describe their food as “Southern-Fried Love on a Plate” and I definitely think that is quite succinct. This is Fried Food at its best. Every time that I am in the mood for things like Fried Catfish or French Fries or Funnel Cake, The Caboose is really the only place in San Marcos on my mind.

so if you are shopping or in the area or just looking for some delicious Southern cuisine and Seafood, get over there!
Many attempt to serve this type of food, but honestly, many fall short of the quality and execution that make this type of food so crave-able.
Fried Southern Food is often served and prepared in a variety of unappetizing fashions mostly due to inattention to detail. I do not want just a fish Po’ Boy with store-bought Tar Tar sauce and stale bread. Nor am I looking for soggy French Fries or Seafood that is not even remotely fresh.
For this reason, I go to The Caboose.
Everything I have sampled at The Caboose has been delicious and well-prepared. The Catfish Po’ Boy is definitely my favorite. They also have some of the best Fried Pickles around.
Their French Fries are great and exactly what I look for in them: always piping hot and crisp on the outside and perfectly moist on the inside with a good salt consistency. They offer Fish and Shrimp Tacos as well as some great sides like Sweet Potato Fries, Fried Mozzarella Stick, and Onion Ring.
The Funnel Cake Fries are so rich and decadent and diners have several options for toppings including berry glazes, chocolate sauce, and powered sugar. They offer Fried Calamari and Crawfish and both are great and will please any Louisiana natives or just anyone seeking some Cajun-style food.
One thing that makes The Caboose unique is their signature sauce. It is akin to a Cajun Ranch but this particular sauce is especially delicious. It is creamy but with a special note of Cajun spice and not overpowering at all, incorporating its flavor well with anything it is added with. The defining characteristic of this sauce is that it seems to go with about everything. I have tried it with countless things and I even bought a bottle of it for myself as it really does go with so many types of food and, more importantly, it pairs with everything on their menu beautifully.
They also serve an incredibly tasty Seafood Chowder seasonally which is some of the best Chowder I have ever had. This chowder definitely showcased the skills of the chefs at The Caboose
