NOTE: This Food Cart has Since Closed Down. I have left this review up because it was my favorite place that I ever reviewed and was simply some of the best food I have ever eaten.. I ate here at least twice a week. If you read a little further on and look at some of the pictures, I think you will see why.
I am so excited to introduce this new Food Trailer.. The Local Smoke Food Trailer is a brand new addition to the San Marcos food scene and I was fortunate enough to sample their whole current menu on the first day they were open.
The Local Smoke is offering something San Marcos is sorely lacking: Farm-Fresh, locally-sourced, extremely delicious and healthy organic food.
The Owner describes his food as “Hill Country” Cuisine and I thought that was quite fitting as their ingredients come from their family farm and other local sources and their menu changes regularly and seasonally.
I cannot express fully how much I have enjoyed this Food Trailer. Chef Kevin has honestly served me some of the best food I have ever had anywhere. His intuition with food is remarkable and one can tell so quickly after sampling even one of his dishes that this is not an ordinary Chef.
Now that they are open, I will be going as much as possible. I really cannot keep myself away because the food is so fresh and refined. This food is also so unique to San Marcos. I am ecstatic that this cart has chosen to locate here
Basically: I am hooked.

I was so impressed with how good everything was.. Each Dish had a lot of thought put into it.. I have traveled quite a bit and this is the sort of food one finds in Sydney, Australia or Washington, DC.. it was so refined and so fresh..
the fact that their ingredients come from their family farm and other local sources is very commendable. I was informed that they will be changing their menu as ingredient availability changes from their farm and elsewhere.
This is even more incentive to come back regularly. This is a healthy-eaters dream as well.. they serve small portion, freshly made dishes that really will nourish you.
I am overjoyed to have them in San Marcos and cannot recommend enough that everyone go and try them..Every single dish was insanely delicious with clean, bright flavors and a noticeable care for detail.
“The Local Smoke” is a food trailer concept created by Kevin Callahan and Joseph Posenecker. Kevin has created a style of cooking combining what he has learned from Jack Allen’s Kitchen, The Odd Duck and Uchi.
He will create daily menus highlighting the produce grown by Joe with meats, dairy and fruit from the San Marcos markets.
A menu that offers something for everyone with skillfully executed comfort food and cuisine that you would expect from the finest restaurants.
The Local Smoke Food Trailer is located in the Food Truck Plaza at The Tanger Outlet Mall at 4015 N Interstate 35 Frontage Rd
At first glance, their menu jumped right out at me and I was glad to have ordered one of each item.
You do not see this type of food in San Marcos very much..

This place is pretty much on the top of my list for food in San Marcos already. If you have not yet, you must try The Local Smoke! They are truly one of a kind in San Marcos.
